I recenty posted a picture of my dinner on Instagram, an insanely comforting and delicious dish of Ox cheeks cooked for six hours in the slow cooker, heaped atop a cloud of fluffy whipped potato. Yes, whipped as distict from mashed. A couple of people remarked on the potatoes, wondering how to make them so they don’t turn to glue. So, I thought I’d quickly explain.
