Quick Note #4: Palestinian cooking
... support Palestine through its wonderful cuisine. A post that's free for everyone, of course. Please share.

Do you feel furious, hopeless and helpless about Trump’s roadmap to ethnic cleansing in Gaza? The only thing I can do today is support Palestinians through their wonderful food. Inspired by Rachel Roddy, who is cooking Palestinian cuisine tonight, I thought I’d share some of my favourite Palestinian authors, recipes and organisations.
Bethlehem: A Celebration of Palestinian Food, by Fadi Kattan. An exceptionally beautiful cookbook and journey through Palestinain food and culture by the wonderful Franco-Palestinain chef. Also, if you’re in London, I can highly recommend Fadi’s restaurant Akub, is extraordinary.
Falastin: A Cookbook by Sami Tamimi and Tara Wigley. This is one of my most loved and used cookbooks, brimming with authentic Palestinian recipes that somehow also feel contemporary. You can also pre-order Sami’s next book, Boustany: A celebration of vegetables from my Palestine, which is published in June.
Palestine on a Plate: memories from my mother’s kitchen, by Joudie Kalla: In ate Joudie’s food when she cooked for us to mark the publication of this book and it’s incredible. Her recipes are just delicious, they’re from the heart.
Zaitoun: Recipes and Stories from the Palestinian Kitchen By Yasmin Khan: Yasmin shares recipes and stories through her travels through the region, so this is not only full of fantastic food, but enriches your knowledge of Palestine.

Zaytoun is an incredible social enterprise that supports Palestinian farmers by helping them get their amazing products to market, and to achieve a fair price for their produce. You can buy luscious olive oil, almonds, dates and more online. Go for it.
A recipe for Sfiha, which published when I first started Substack. This post is also a loveletter to the Paletinian people I met on the West Bank when I visited in 2022. Please read and share.
So much love for this and for the People of Palestine
Merci Sue.
