Part of the reason I’ve been using beans more in my cooking is that my husband HAS given up potatoes. And pasta, bread and rice too. You’d probably be as surprised as I was at how relatively easy it’s been for us to live without those things (except, in my case, for bread. I’m not giving up my sourdough!).
